No-Bake Peanut Butter Rice Krispies Cookies


Ingredients:
  • 1 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 1/2 cups salted peanut butter
  • 2 teaspoons pure vanilla extract
  • 4 cups Rice Krispies

Instructions:

Line a 9 x 13-inch baking pan with wax paper or baking parchment. Place the corn syrup and sugars in a large saucepan over medium heat and stir to combine. Bring to a boil. Remove from the heat.

Stir in the peanut butter and mix well to combine. Quickly stir in the vanilla and Rice Krispies. Spread into the lined baking pan. Cool and slice into squares.

  1. There's no need to put the rest of that stuff in there. Just make the rice krispies like it says on the box and add a giant spoonful of peanut butter. It's perfect! All you need is butter and marshmallows. Simple.

    1. This way is better because then vegans and vegetarians can eat it. :) I haven't had Rice Crispy Treats since I became vegan because they have gelatin and butter in them.

  2. I made these today - delicious! I have to suggest that anyone wishes to make these ought to cut them into squares and - the important bit - pop them onto a plate before they fully set up, because mine harden and stuck to the wax paper. I still eat them, but boy! Were they a pain to cut.
