Vanilla Coconut Rice Pudding





I found this on FFFFOOD tumblr page, and it got reblogged again and again. And rightfully so, it was absolutely delicious. Again, one of those things that tastes better the longer it sits in your fridge, I definitely recommend giving this fabulous and ridiculously simple rice pudding a go.

Vanilla Coconut Rice Pudding

Ingredients:
  • 1 1/2 cups of cold cooked rice
  • 1 1/2 cups of coconut milk
  • 2 cups of whole or 2% milk
  • 1/3 cup of sugar
  • pinch of salt
  • 1 vanilla bean, insides scraped out

Instructions:

Combine all the ingredients together in a saucepan and simmer over medium-low heat for 40 minutes. Allows to cool and serve.

  1. I have made this recipe SEVERAL times and each time it was a winner. I gave it away in mason jars and now it is the requested "gift."

  3. Yes! Of course! That is what makes rice pudding such an inexpensive but sweet treat, is using cooked rice.

  5. It seems like so much liquid if the rice is already cooked. Does it really absorb?

  7. I'm trying it right now and you definitely need sweetened coconut milk. As I tast test while cooking it, I may even add nutmeg and cinnamon.
