Chocolate Caramel and Pecan Turtle Clusters





Ingredients:
  •     2 1/2 C pecans
  •     1/2 C butter (I use salted)
  •     1 C brown sugar
  •     1/2 C light corn syrup
  •     7 ounces sweetened condensed milk (1/2 of a 14 ounce can)
  •     1/2 t vanilla
  •     1 (12 ounce) package milk chocolate chips
  •     1/2 t shortening (I use butter flavored Crisco)

  1. Hmmmm.....where are the directions for the caramel portion of the recipe? You say "flatten each caramel" as if they are prepackaged caramels, but the pictures show someone spooning a melted caramel or caramel sauce...and does one chocolate chip really cover over three full pecan halves? Perhaps this recipe needs an update?

    3. Carefully read the recipe. It has good directions for all the steps and is easy to follow. You should have no trouble.

    4. No Carmels to flatten :) "Step 3" shown above in the recipe, is the directions for making/mixing the Carmel Sauce :) Good Luck! ....(Denise)

  2. I'm guessing the butter, brown sugar, corn syrup, and sweetened cond milk mixed together is what they're spooning on top at first. Then melt the Crisco and chocolate chips in microwave to spoon over the top and let cool?

  9. Just follow the recipe as given. Step 3 is how you make the caramel. It was easy - I just made them and they look delicious! Can't wait until they set and I can have one.

  11. Easy to follow recipe, and oh so yummy! Thank you! When toasting the nuts, I did add a little butter and salt to them......sooo happy with how they turned out!

  12. Instead of making the caramel recipe, use Caramel Bits sold alongside chocolate chips in the stores. Melt them in the microwave on 50% power with a tiny amount of heavy (half & half) cream. Much easier.
